Long before Jeff Davis County students arrive at school each morning, another school day is already underway inside the district’s cafeterias. Breakfast has to be prepared. Lunch preparations are beginning. Food temperatures must be monitored. Serving areas have to be ready. Supplies must be stocked. And before the day is over, hundreds of students will make their way through those cafeterias — twice. Then everything has to be cleaned, organized and prepared to happen all over again the next day. It’s a side of the school day most people rarely see, and it’s the daily work of the Jeff Davis County School Nutrition staff.
It’s so much more than putting food on a tray. A look behind the scenes at Jeff Davis County School cafeterias provides a glimpse into just how much goes into feeding students. Nutrition employees prepare and serve meals while also cleaning, restocking and organizing their kitchens and serving areas. At the same time, they must make sure meals meet federal nutrition requirements.
They’re also working to give students choices. One recent lunch at Jeff Davis Primary featured the school’s Sub Line, where students and staff could choose a sub sandwich with fresh lettuce and tomato, olives and banana peppers, Sun Chips, an orange and milk. It may look simple when the tray reaches the student, but getting hundreds of meals prepared and ready for service each day takes a team working behind the scenes. And their job isn’t simply to feed students. It’s to help make sure children are ready to learn.
Jeff Davis County Schools operates under the federal Community Eligibility Provision, commonly known as CEP, allowing the district’s School Nutrition Program to provide free breakfast and free lunch to all enrolled students regardless of household income. Parents and guardians do not have to complete free or reduced-price meal applications for students to receive their standard daily school meals. There are still charges for extras, including à la carte items, second snacks and visitor or adult meals. For families, however, the program means one important thing every school day: students have access to breakfast and lunch without cost becoming a barrier.
This school year, the nutrition department is also finding new ways to make breakfast more accessible. New breakfast carts are being introduced for the 2026-27 school year, allowing School Nutrition employees to take breakfast into school hallways rather than requiring every student to come through the cafeteria. It’s another example of work that often goes unnoticed — identifying ways to reach students and making adjustments to better serve them.
The work doesn’t always stop when school does. The district’s nutrition staff also serves children beyond the traditional school year. During the summer, Jeff Davis County School Nutrition provided meal pickups offering multiple days of breakfasts and lunches for children up to age 18. Hot meals were also served at Jeff Davis High School during the week. That means even when classrooms were empty and the regular school year had ended, members of the School Nutrition team were still helping make sure children in the community had access to meals.
Teachers teach. Bus drivers get students safely to and from school. Custodians keep buildings running. Administrators lead their schools. And every day, another group of school employees makes sure students aren’t trying to learn on an empty stomach.
They arrive early. They prepare hundreds of meals. They learn students’ names and preferences. They serve breakfast, turn around and prepare for lunch, clean kitchens and serving areas, manage inventory and supplies, follow nutrition and food-safety requirements and get everything ready to do it again. Much of that work takes place where most parents and community members never see it. But students see these employees every day. And sometimes the person handing a child a breakfast or lunch tray is also offering a smile, an encouraging word or simply another familiar face that makes school feel like home.
To the School Nutrition employees serving students throughout Jeff Davis County Schools: thank you. Thank you for the early mornings, the busy lunch periods and all the work that happens behind the scenes. Feeding students may be your job. But taking care of them is part of what you do every day.
